Ingredients
Teff flour2 cups
Sub: whole wheat flour mix
Chicken drumsticks8
Sub: bone-in chicken
Berbere spice3 tbsp
Sub: paprika + cayenne mix
Niter kibbeh4 tbsp
Sub: clarified butter with spices
Hard-boiled eggs4
Sub: tofu for vegetarian
Instructions
  1. 1

    Mix teff flour with water and ferment for 2-3 days

  2. 2

    Pour thin batter on hot griddle for injera bread

  3. 3

    Sauté onions slowly until caramelized (30+ minutes)

  4. 4

    Add berbere and cook until fragrant

  5. 5

    Add chicken and simmer until cooked through

  6. 6

    Nestle eggs into stew before serving
